Most coffee reaches you months after it was roasted. Ours is roasted on the floor of the shop you are standing in — in batches as small as 100g.

There is a roaster on the floor at Kensington, Monument and Gurney. Not behind glass in a warehouse on the other side of the country — in the room, running through the day, while the coffee is being poured.
It is computer-controlled and runs on clean energy, and it works in batches from 100g to 4kg. Small batches are not a romantic detail. They are what lets us roast one origin for one week, taste it, and change it when the crop changes — instead of committing a tonne of green coffee to a profile and living with it for a year.
It also means the margin that normally leaves with the supplier stays in the shop.
Where the coffee comes from
We buy few things, and we buy them properly. Current crop, landing now:
- Colombia — AMACA, El Tambo, Cauca. A women producers' association in Cauca. Fully washed.
- Colombia — Inza, Cauca. A community lot from the Inzá municipality.
- Brazil — Fazenda Santa Cruz, Varginha. Catuaí varietal, pulped natural.
- Mexico — Grapos. Certified organic, Mountain Water decaffeinated. This is our decaf, and no solvent goes near it.
Alongside these we run rotating single origins — Costa Rica, Ethiopia, Kenya — as the crops come round.
Why the blends have Japanese names
Hana is flower. Mori is forest. Kōgen is highland. Kaze is wind. Iwa is rock. Sora is sky. Take is bamboo.
They are not decoration. Each name is shorthand for where a coffee sits — Hana floral and light, Iwa dense and dark — so you can choose by character rather than by another roaster's adjectives.
